Six combinations of wheat flour, beans, corn, rice, and milk were fed to healthy young adults. Wheat flour furnished 50% of the 7.0 g of nitrogen in the basal diet and two other sources each supplied 25%. Mean daily nitrogen balances, which ranged between 0.72 ± 0.58 and 0.38 ± 0.57 g, did not differ significantly as a result of treatment. Urinary nitrogen was not influenced significantly by treatment but fecal nitrogen tended to be higher when beans were included.
