Summary

Sugars impart a pleasant, appealing taste to foods and contribute to the textural and handling properties characteristic of certain foods. However, investigators have raised several concerns about the potential health effects of excess sugars consumption. The purpose of this workshop was to critically review the literature; to evaluate newer information, especially that available after the 1986 Food and Drug Administration report on sugars, which provided a very thorough evaluation of sugars consumption and health; and to identify new directions for research. I present a summary of these issues. It is clear from the papers presented here that a considerable amount of new information is available that will enable us to more fully understand the association between intake of sugars and health.
