This regularly updated manual provides optimal assistance to the practicing dietitian, especially in the United Kingdom but also in the United States. Divided into 6 sections, the manual begins with a section on the general principles of dietetics that reviews healthy eating guides, assessment techniques and standards, institutional guidelines, professional practice standards and healthcare ethics, and discussions of oral, enteral, and parenteral feeding. Each subsection is well referenced and includes listings of additional sources of information and useful contacts in the United Kingdom.
One section includes an overview of basic foods and nutrients. This section summarizes the key points of major nutrients and finishes with a discussion of food laws, UK labeling regulations, and drug-nutrient interactions. Nutritional needs at all life stages from infancy through old age are provided, and chapters on vegetarianism, people with disabilities, and exercise needs are discussed.
The latter two-thirds of the manual provides comprehensive coverage of the dietary management of disease states. Each section and subsection provide suggested and recommended types of dietary management for patients with a wide variety of needs, eg, those who have had recent dental work or who have celiac disease, heart disease, arthritis, or a mental illness.
The manual contains a separate section on the nutritional requirements of patients with acute trauma, spinal cord injury, and injuries from burns or head trauma. Another section contains
30 pages of appendixes that include anthropometric guidelines, weights and measures, clinical chemistry guides, medical abbreviations, and the addresses, uniform resource locators, and phone numbers of pertinent associations and societies.
Although this manual is written and published in the United Kingdom, most of the material is also applicable to the practice of dietetics in the United States. The references are appropriate for both countries, but the associations and societies listed are primarily located in the United Kingdom. Nevertheless, the manual is a useful reference source for practitioners in both countries. In addition, this manual could be used in conjunction with basic nutrition texts in dietetic education settings.
